Big thanks to everyone who submitted their recipes for the first GymJunkies recipe contest! It was tough to narrow it down to my three favorites, but here are the three dishes that I cooked for the final taste taste:

The buffalo chicken chili had great flavor without being unbearably spicy-hot. The mango dressing was delicious with the Thai shrimp salad. But without a doubt, the Steak a la Chez Wolf was my runaway favorite. Strawberries cooked with balsamic vinegar? Amazing! And combined with the sauteed spinach and the steak that I cooked medium rare, Julie’s steak recipe was the clear winner. Congrats, Julie!

Steak sounds great. Will definitely make it this week. But coconut oil? Is substituting it with a olive oil or veggie oil a bad idea ? I’m just out of fresh coconuts
The coconut oil MADE that dish. It was the first time I had ever cooked with coconut oil and it was delicious. I think the recipe would still be good with olive oil. But the coconut with the strawberries, and then the vinegar. . . it was amazing!
This doesn’t require cooking, but I love to make it when it gets 100+ degrees where I live. I love to have ahi tuna sashimi with cucumber and avocado salad. I slice up the tuna and the salad is just fresh cucumber and half a small avocado all tossed in a little rice vinegar with pepper.
Sometimes I marinate it in ginger, soy sauce, cayenne, salt and pepper for 20min and sear it. I like things spicy so I always have it with some wasabi too. It’s so good, and although buying the sushi-grade tuna can be a little expensive it’s still cheaper than getting it at a restaurant.
What would you use the Buffalo chicken with? Since it is ground meat broken up…what do you do with it?

Coconut oil is FAR better than Olive oil (use cold pressed), and Veggie Oil is far too processed to be good for anything than making something slippery. If you really want to substitute the coconut oil, use butter or Ghee (both will be in your super market). Olive Oil is the 3rd line of defense against obesity and maintaining good health.
